Step 1: Prepare the Rice Noodles

Place the rice noodles in a pot of cold water and cook for 10–15 minutes, until they can be easily snapped with chopsticks. Drain thoroughly and set aside.

Step 2: Simmer the Broth

Refill the pot with 400g of fresh water and bring to a rolling boil. Add the pre-cooked rice noodles and the soup base packet, then simmer for an additional 2 minutes.

Step 3: Season and Serve

Add the seasoning packets to taste, turn off the heat, and serve immediately. For an authentic touch, top with dried beancurd sticks (yuba).
